Instructions
1.Over medium heat add oil, add onion [cook until softened], add garlic, thyme, and shredded ginger root. 2.Add rough chop tomatoes, push on to help break apart. 3.Add tomato paste, 1tbsp water, curry powder, salt, allspice, ground ginger, ground cumin, garam masala, turmeric, and red pepper flakes. 4.Stir in coconut milk, vegetable stock, and chickpeas and simmer for 25 minutes or more until desired consistency. Serve with rice, naan, quinoa, or ect.
