Jerk Chicken with Rice

Share by URL thumbs up
Instructions
1. To make the jerk marinade, combine all the ingredients together using a hand blender. If you’re having trouble getting it to blend, just keep turning off the blender, stirring the mixture, and trying again. Eventually it will start to blend up – don’t be tempted to add water, as you want a thick paste. 2. Taste the jerk mixture for seasoning – it should taste pretty salty, but not unpleasantly. If it tastes too salty and sour, try adding a little more sugar until the mixture tastes well balanced. 3. Make a few slashes in the chicken thighs and pour the marinade over the meat, rubbing it into all the crevices. Cover and leave to marinate whilst you wash up your equipment. And prepare the rice 4. To make the rice – rinse the rice in cold water, then tip into a medium saucepan. Add the coconut milk, spring onions, garlic and allspice 5. Add 300m cold water and begin to heat on a high heat on the hob, until it comes to the boil, turn to a medium heat and cover and cook for 10 minutes, whilst you cook the chicken in the air fryer. 6. When rice is tender add kidney beans, then cover with the lid again. Leave off the heat until the liquid is absorbed. 7. Serve on a plate alongside the chicken.
