Instructions
Directions: Heat oil in a pan. Add onions and garlic and sauté until transparent. Add celery, carrots, oregano, cumin, chile powder, salt and black pepper to onions. Cook until tender-crisp. Add chopped green peppers, zucchini, mushrooms, diced tomatoes, red beans, water, lemon juice and chipotle. Stir and cook until temperature of 180 °F. To Serve, Ladle chili into soup bowls, Sprinkle ¼ oz cheese over each portion.
