Instructions
Cook orzo in salted water to al dente, rinse with cold water and drain. In a large mixing bowl, combine Gorgonzola or Feta Cheese, salami diced in quarter inch cubes, mushrooms diced, artichokes diced, heart of palm quarter inch diced cubes, baby corn quarter inch rounds, sun-dried tomatoes Julienne sliced, katamata olives quartered, and capers chopped. *if desired, add Pickled Summer Veggie Mix. Toss ingredients in a blend of marinade from the artichoke hearts and the katamala olives. Add spices. Stir in cooked orzo. If necessary, add more marinade or olive oil to evenly coat pasta. Refrigerate and serve chilled as is or over a bed of mixed greens. Easily stays fresh up to 1 week.
